Outside of Japan, Australia is the leading world supplier of Wagyu beef. Australia’s strict border protection allows Blackmore Wagyu Beef to be produced ‘naturally’, as the cattle are raised on rich pastures reducing the risk of disease, and fed rations that are free of antibiotics, growth hormones and genetically modified products.

Blackmore Wagyu Beef’s success comes from using unique farming methods; combining old world traditional Japanese farming, with new, technically sound scientific methodologies. This combination contributes to improvements in both the meat and the quality of the animals’ lives.

Blackmore Wagyu Beef adheres to a set of procedures designed to ensure the quality standards and processes used to produce Japanese Wagyu beef. The aim is to ensure that the final delivered product meets or exceeds the customer's requirements and expectations. David Blackmore ensures that a quality mindset is maintained throughout the products lifecycle; including farm management, animal husbandry, genetic selection, feeding facility, processing and distribution.

The Blackmore Wagyu Beef herd has evolved to ensure that the animals are suitable for Australia’s climatic conditions, yet maintaining the best Wagyu traits. Wagyu beef is assessed for: (i) intensity of marbling; (ii) meat colour and brightness; (iii) firmness and texture of meat; and (iv) colour, lustre and quality of fat. The dedication to succeed in all of these traits is what makes Blackmore Wagyu Beef different to other 100% Fullblood Wagyu and labels it as one of the most highly sought after beef products in the world.

Our cattle are fed a secret ration of natural ingredients for 500-600 days. Administering a precise feeding regime is critical to ensuring that Blackmore Wagyu Beef achieves its consistently high marbling score of 9+ (Australia’s highest score). We follow a traditional authentic Japanese feeding regime, which is extremely sophisticated and scientific in its approach.

Blackmore Wagyu Beef prides itself on maintaining the following;
