Blackmore Wagyu Beef is a combination of the three most famous breeding strains - Tajima from Hyogo Prefecture, Itozakura from Shimane Prefecture, and Kedaka from Tottori Prefecture - in Japan.
David Blackmore has been studying the age old Japanese tradition of Wagyu beef, often tracing family trees and bloodlines for more than 10 to 12 generations in an attempt to learn the traditional Japanese secrets and centuries of history. It has been Blackmore's often obsessive (some say crazy) study that has now set Blackmore Wagyu Beef as a leader of carcass quality outside of Japan.
